This cheese is produced with mixed pasteurised milk (ewe/cow) with prevalence of ewe milk. INGREDIENTS: ewe-cow mixed milk
SHAPE: drum-shaped
WEIGHT: 500 GR approximately*
TEXTURE: white or slightly pale yellow with few holes
RIND: rough covered with a black surface
AGEING: 4-5 months
During the months of ageing the cheese is treated at different stages with oil and smashed black pepper on the surface, in order to obtain a relatively soft texture almost buttery, at tasting gives out a classic smell of berries and seeds.
